Course Details

The objective is to cover the principles of food hygiene for food handlers working in either a catering or retail environment. It is a valuable free-standing qualification that is also suitable for learners and employees engaged in other food based vocational training and employment.

The purpose of this qualification is for learners to obtain a knowledge and understanding of; the importance of food hygiene, associated food safety hazards, good hygiene practice and controls based upon an awareness of food safety management systems.

Course Content

  • Understand food safety hazards by identifying contamination and cross-contamination hazards to food safety, explain how contamination of food can cause illness or injury, explain the importance of personal hygiene and behaviour to food safety and Outline the legal responsibilities of food handlers and food business operators.
  • Understand how to control food safety hazards: using safe food handling practices and procedures by preventing or minimising the risk of cross contamination, temperature control, dealing with stock and deliveries to customers, work flow, work surfaces and equipment, keeping the work area and equipment clean and tidy, dealing with hazards and potential hazards such as food spoilage, waste and pest prevention.

Assessment

The examination consists of 30 questions. The duration of the examination is forty minutes. A candidate who is able to Satisfy the learning outcomes will achieve a score of at least 20 out of 30.

Award

The results are released by the Institute within about two weeks. Successful candidates receive the Ofqual accredited certificate Compliance's Level 2 Award Food Safety and Hygiene certificate.

Course Details

The food service sector needs to get ready for major changes to food labelling legislation when the EU Food Information Regulation (FIR) 1169/2011 comes into force on 13 December 2014.

The legislation will introduce a mandatory requirement for food businesses to provide accurate allergy information for particular foods sold unpackaged (loose). This information can either be written or provided orally by a competent member of staff. It will not be enough for restaurants and other catering establishments to simply declare they do not know whether a food contains any of the 14 allergens listed under the Regulation.

Aim

This course has been developed for those responsible for the management of food safety to understand the characteristics of food allergies and food intolerances, how to reduce the risk to consumers and how to comply with current and future legislation.

By the end of this course the candidate will be able to:

  • State the characteristics of food allergies and food intolerances, including current statistics.
  • Outline the different roles in ensuring that food ingredients and allergens are effectively managed.
  • State the procedures relating to the accurate communication of ingredient information, from supplier to consumer.

Who Should Attend?

An ideal course for food business operators, managers and employees working in food businesses. Course Details

Hazard Analysis and Critical Control Point (HACCP) provides an effective and practicable management tool for identifying food safety hazards and ensuring that adequate controls are in place.

This Level 3 qualification covers the importance of HACCP-based food safety management procedures, the preliminary processes for HACCP-based procedures, development of the procedures, monitoring of critical control points and corrective actions and the evaluation of the procedures.

The qualification is firmly based on the National Occupational Standards developed by Improve, the Sector Skills Council for the food and drink manufacturing industry, and conforms to the qualification template developed by RSPH, other awarding bodies and Improve.

The scenarios will reflect both manufacturing and catering. The qualification is graded as either Pass (20/30) or Distinction (26/30)

Award

Successful candidates will receive the recognised accredited certificate Compliance's Level 3 Award in Understanding how to Develop a HACCP Plan

If a candidate fails the assessment, he or she is permitted to re-sit the examination once after paying an appropriate exam fee. If a candidate fails a re-sit, he or she will have to undertake the full training programme again.

Course Details

The Health and Safety (First-Aid) Regulations 1981 require employers to provide adequate and appropriate equipment, facilities and personnel to ensure their employees receive immediate attention if they are injured or taken ill at work. These Regulations apply to all workplaces including those with less than five employees and to the self-employed. This one day course is designed for persons in low-risk workplace environments to meet these requirements.

Aim

The aim of the qualification is to enable learners to attain the knowledge and competencies needed to deal with a range of emergency first aid situations. Learners should be able to demonstrate the practical administration of safe, prompt, effective first aid in emergency situations with the understanding of the role of the first aider.

Award

On successful completion of the course delegates will receive a Level 3 Award in Emergency First Aid at Work certificate which is valid for 3 years. The certificate are released by the Institute within a few days. The Health and Executive strongly recommends that candidates undertake an annual refresher course. Also, candidates must re-qualify after three years.

Course Details

Under the Licensing Act 2003 - Personal licences authorise individuals to sell or supply alcohol, or authorise the sale or supply of alcohol, for consumption on or off premises for which a premises licence is in force for the carrying on of that activity.

To qualify for a personal licence an individual must be aged 18 or over and possess a recognised qualification. This course has been specifically adapted to meet these requirements.

40 multiple-choice questions at the end of the course (1 hour allowed). To achieve the certificate you must get a minimum of 28 correct answers.

Award

The results are released by the Institute within about a week. Successful candidates will receive a recognised certificate. The qualification is accredited by both Ofqual and the Secretary of State at the Department of Culture, Media and Sport, and has been designed to meet the statutory requirements of the Licensing Act 2003.
